Haynes says something silly like 25amp. Is that even possible?

Hi The-blue
There were a number of outputs on the 4 Pot ( Audi ) unit : 45-65Amp. However; it goes something like : Whatever will fit, has an output that meets your needs and satisfies the maximum continuous current capability of the charge cable will do.

Hi!
So..... it could be anything
It runs at 12.8v with lights, radio and fridge running (plus leisure battery)
My current thought is run either the headlights or the fridge..

Hey-Up! The-blue
Standard LT ( petrol ) with no electrical options would likely be 45Amps which is a waste of space on a Camper.
Although there is another forum running at the mo., that covers the charging side, 12.8V will not keep the battery at optimum ( 13.8/14.4 needed for that ). As your alternator has to cope with both Van and Camper batteries I would be inclined to check the part number on yours ( if you can see it ) and check it for the rating.
Best practice ( petrol ) would be to go to your local Auto Elect Factors and get a 80-100Amp one but you may/will have to upgrade your charging cables and main feed fuses.
One point to keep in mind is that volt drop can be equally caused by using too light a gauge of feed cable. If a cable is warm/hot then it is underrated.
You omit to add Wipers and Blower ( heater - assuming that you don't have a Supercharger!!!!! ) on full speed when checking your volt drop.
